ZIPLOC OMELET

Thank you, Shona, for sharing this fun ZIPLOC OMELET recipe.

This works great !!! Good for when all your family is together. The best part is that no one has to wait for their special omelet !!! Follow these easy steps:

Have guests write their name on a quart-size Ziploc freezer bag with permanent marker.

Crack 2 eggs (large or extra-large) into the bag (not more than 2) shake to combine them, or whip prior in a small bowl.

Put out a variety of ingredients such as: cheeses, ham, onion, green pepper, tomato, hash browns, salsa, etc.

Each guest adds prepared ingredients of choice to their bag and shake. Make sure to get the air out of the bag and zip it up.

Place the bags into rolling, boiling water for exactly 13 minutes [we did 15 minutes]. You can usually cook 6-8 omelets in a large pot. For more, make another pot of boiling water.

Open the bags and the omelet will roll out easily. Be prepared for everyone to be amazed. (Careful of the heat escaping)

Nice to serve with fresh fruit and coffee cake; everyone gets involved in the process and a great conversation piece…

Holistic Laundry Detergent

I’m always looking for healthy alternatives for my household.  A friend told me about this one.  A holistic laundry detergent that works great, lasts a long time and costs much less than store bought.  Kind of reminds me of Granny on Beverly Hill Billies – but whatever works!  Could be a fun family activity.  Hey kids, let’s make some soap. 

Ingredients:

* 1 Quart Hot Water
* 1/2 Cup Washing soda/Sodium Carbonate                                                                                                                                                                * 3 Pints Water
* 1/3 Bar Fels Naptha Soap or any other bar soap, Grated
* 1/2 to 1 Cup Borax
* Hot Water

Directions

Mix Fels Naptha Soap in a saucepan with 3 Pints water and heat on low until dissolved. Stir in washing soda and Borax. Stir until thickened (it doesn’t get real thick) and remove from heat. Add 1 quart hot water to 2 gallon bucket. Add soap mixture and mix well. Fill bucket with hot water and mix well.

Healthy Coffee

My children love that I let them drink coffee.  Why do I?  Because it’s healthy coffee (there is also hot chocolate for those of us who don’t drink coffee).  You still get the rush you need from the coffee, but without the jitters.

For our littlest one, we open up the Ganoderma capusles and put half of it in his chocolate milk.  It is amazing the difference in his temperment!  He is calmer, sweet and loving.  When we forget, he is cranky and gets angry quickly.

Here is some of the technical side of the why it’s healthy coffee:

Tzatziki Sauce

This is a family favorite.  Typically found on gyros.  Tzatziki is great with chicken, beef, brown rice or even use as a dip for vegies.

1/2 cup sour cream

1/2 cup vanilla yogurt (or plain yogurt)

1 cucumber, peeled, seeded and finely chopped

1 garlic clove (more if you like lots of garlic), finely chopped

Mix sour cream and yogurt, set aside.  In food processor or blender, chop the cucumber and garlic until fine.  Add to the sour cream and yogurt mixture.  Refridgerate for minimum of 1/2 hour (longer is better).

The garlic, sour cream and yogurt can be increased, just add to taste.

Greek Pastitsio Made Easy

Pastisio Cheeseburger PieI took the Bisquick Cheeseburger Pie recipe off the box and added a secret ingredient.  Very similiar taste to my Grandma’s homemade Pastitsio that took hours to make.

 

 

 

1 lb. Ground Beef

1 Cup Chopped Onion

1/2 Tsp. Salt

1/4 Tsp. Cinnamon or Nutmeg (the secret ingredient)

1 Cup Shredded Cheddar Cheese (substitute Mizithra if you have it, a Greek cheese)

1/2 Cup Bisquick

1 Cup Milk

2 Eggs

Spray a 9-inch pie plate.  Cook beef, drain.  Stir in salt and cinnamon (or nutmeg).  Spread in pie plate.  Sprinkle with cheese.

Stir remaining ingredients in medium bowl.  Pour into pie plate.

Bake at 400 degrees for 25 minutes.  Serve immediately.  Greek salad is a great side dish.  Be sure to add lots of feta for me.  Let me know how it turns out for you!

Cheesy BLT Mini Sandwiches

Pillsbury

To make this more family friendly I chop up the tomatoes and add to mixture.  Be sure to remove all of the slimey seeds for those of us who are picky eaters. 

INGREDIENTS 
1 can (8 oz) Pillsbury® Crescent Recipe Creations™ refrigerated flaky dough sheet
1/2 cup Cheddar-Monterey Jack cheese blend, shredded (2 oz)
8 slices bacon, crisply cooked, crumbled (1/2 cup)
2 tablespoons chopped green onions (2 medium)
1/3 cup mayonnaise or salad dressing
1/2 cup shredded lettuce
8 cherry tomatoes, sliced

Directions

1. Heat oven to 375.  Unroll dough on work surface; press into 12×8 rectangle.  Cut into 24 squares; place on ungreased cookie sheets.  Bake 8 to 10 minutes or until golden brown.  Remove to cooling rack. 
2. Meanwhile in small bowl, mix cheese, bacon, onions and mayonnaise.  Place slightly less than 1 tablespoon lettuce on bottoms of 12 crescent squares. 
3. Top each with 1 heaping tablespoon bacon mixture and 2 slices tomato.  Top with remaining crescent squares.
